A three-compartment sink is the fixture health departments require for manual warewashing — wash, rinse, then sanitize. Each compartment must be large enough to submerge your largest pot or utensil (many jurisdictions set a minimum bowl size, and require two integral drainboards). Waste must be indirect (air-gapped). Size the bowls to your largest pot: measure it and pick a compartment that submerges it with clearance. Economy 10"×14" bowls suit light/convenience use; a full kitchen usually wants 16"×20" or larger, with 18"–24" drainboards. Add left/right/dual drainboards to match your workflow.
